Where luxury feels timeless

On my first morning, being a nature lover, I walked through the woods and felt a calm like I’ve rarely known. Fresh July air, a gentle breeze, it was almost like stepping into a storybook and you sense how carefully the balance between past and present has been preserved. The grace of old Ireland lives on here, but with all the comfort and warmth you’d expect from a modern Fairmont resort. 

Originally built in the 18th century as the country seat of the Duke and Duchess of Leinster, the estate remained in the FitzGerald family for more than 250 years. Every corner still whispers of that heritage: the sweeping staircase, the grand halls and the way the morning light falls across the old stone facade. Today, this historic mansion feels renewed, refined rather than restored, timeless yet comfortably modern. Carton House isn’t only about history and architecture, it’s also one of Ireland’s most celebrated golf destinations. The resort features two championship-level courses, both uniquely designed and surrounded by the natural beauty of County Kildare.

One of the highlights of my stay was the Michelin-starred The Morrison Room, tucked inside the manor. The room itself is breathtaking, original early 19th-century architecture, high curved ceilings, Greek Corinthian columns, ornate plaster work and sweeping banquettes. Under the direction of Chef Adam Nevin, the menu reflects Irish fine-dining at its best, with locally-sourced and foraged ingredients presented with creativity and meticulous technique. Each dish I tried was a surprise in the best way, rich, balanced and elegant. 

The commitment to nature isn’t just decorative, it’s deeply grounded in action. The resort has its own bee yard where native Irish bees thrive without the use of synthetic pesticides or chemicals. On my stay I took part in the beekeeping experience alongside the resident beekeeper, Thomas Clancy. We donned protective gear and visited the hives tucked away in the estate’s ancient woodlands. I learned how these bees — of the species Apis mellifera mellifera — are specially suited to Ireland’s climate, flourishing in the clean, green environment of the grounds. What fascinated me most was how the honey produced on-site becomes part of the guest experience: raw, unprocessed and full of natural flavour. This honey is then served at breakfast buffets and used creatively in the resort’s cuisine. 

Carton House is more than a luxury hotel. It’s a place where history meets nature, where elegance is quiet and genuine and where you can both unwind and feel inspired.
